Birthday Cookies These cookies have a neutral base that lends itself to adding goodies like dried fruit, candies and whatnot. It's a great recipe to tailor to to the taste of a friend or family member for a birthday or for any other occasion.
Preheat Oven to 375 degrees F
3/4 cup butter (softened) 1 cup packed dark brown sugar 1/2 cup sugar (granulated or baker's sugar) 1 tsp baking powder 1/2 tsp cinnamon 1/4 tsp salt 2 eggs 1 1/2 cups white flour 2 cups oats 1/2 cup melted peanut butter
In a large bowl, mix sugars, butter, vanilla and eggs.
In a separate bowl mix flour, baking powder, salt, and cinnamon.
Beat as much flour into the wet mixture as possible. Add melted peanut butter and beat in remaining flour folding oats into the dough.
Mix in other add-ins such as nuts, raisins, dried fruit chocolate whatnot. I've made this with chopped dried figs chocolate and seasalt and it was just to f*cking die for.
Drop 1/2 inch balls of dough onto cookie sheet with an inch in between lumps.
Bake 8-10 minutes, allow cookies to cool 1 minute (at least) before transferring to another rack to cool.
Yields around 80 or so cookies depending on side.

Not a recipe, but today I saw the most amazing thing EVER. A chocolate chip cookie with an oreo in the center! Probably just take your favorite chocolate chip cookie dough, wrap it around an oreo, and bake. I can't wait to pop this kid out so this gestational diabetes goes away and I can indulge again!

Vinegar Cookies
1 cup butter, softened 1 cup white sugar 1 1/2 cups all-purpose flour 1 tsp distilled white vinegar 1 tsp baking soda I cup chopped pecans
1. Preheat oven to 325 degrees
2. Cream together butter and sugar. Add all other ingredients. Drop by teaspoonlightly greased sheet.
3. Bake for 18 - 20 minutes.
They are simple and yummy! They taste a lot like Pecan Sandies. .

Ah and here I thought this was a thread for the "Monster Cookie" recipe!
I used to have it; will have to check my recipes and see if I still do. If so I'll come back and post it.

Monster Cookies
Ingredients: 1 stick unsalted butter (1/4 pound), softened to room temperature 3/4 cup brown sugar 3/4 cup granulated sugar 1 cup creamy peanut butter 2 eggs 1 tsp vanilla extract scant 1/2 tsp baking soda scant 1 cup all-purpose flour 1/4 tsp salt 2 cups quick oats 1 cup M&Ms 1 cup chocolate chips
Directions: 1. Preheat oven to 350F. Line two baking sheets with parchment paper and set aside.
2. Cream butter and sugars together with an electric mixer for about 3 minutes. Add peanut butter, eggs, then vanilla, beating after each addition. In a separate bowl combine the baking soda, flour, and salt. Mix the dry ingredients into the creamed mixture, blending just to combine.
3. Fold in the quick oats, M&Ms, and chocolate chips.
4. Roll balls of dough (about 2 tbsp/cookie) [you can use a cookie scoop] and place on prepared baking sheets. Bake for 9-10 minutes. Cookies will appear undone. Allow to cool on cookie sheet for 5-10 minutes before transferring to a wire rack to cool completely.

Ingredients: 2 sticks (1/2 Pound) Butter (salted) Softened 1/2 cup White Sugar 1 1/2 cup Brown Sugar, Packed 2 whole Large Eggs 1 Tablespoon Vanilla Extract 1 1/2 cup All-purpose Flour 1/2 teaspoon Baking Soda 1 teaspoon Baking Powder 2 teaspoons Kosher Salt 1 1/2 cup Oats (either Quick Or Regular) 1/2 cup M&Ms (more To Taste) 1/2 cup Pecans, Chopped (more To Taste) 3/4 cups Chocolate Chips (milk Or Semi-sweet) 1/2 cup Peanut Butter Chips 2 1/4 cups Rice Krispies
Directions: 1. Preheat oven to 375 degrees.
2. Cream butter with sugars until fluffy. Add eggs one at a time, beating well after each addition.
3. Add vanilla and beat.
4. Combine flour, baking soda, baking powder, and kosher salt. Add to mixing bowl and mix till combined. After that, add in remaining ingredients in whatever quantity you prefer. Add more nuts if you'd like, or more M & M's, more peanut butter chips or chocolate chips.
5. Add Rice Krispies at the very end, mixing until just combined. Do not overmix!
6. Use a small ice cream scoop / cookie scoop to scoop balls of dough onto a cookie sheet. Bake until golden brown, then allow to cool on a rack.
****************** Soft Monster Cookies
Ingredients: 1/2 cup or 1 stick of butter (at room temperature) 1/2 cup brown sugar 1/4 cup white sugar 3/4 cup creamy peanut butter 1 egg 1 teaspoon vanilla 1/2 teaspoon baking soda 1 1/4 cups all purpose flour 1/2 cup quick cooking oats 3/4 cup M&Ms 1/4 cup chocolate chips 1/4 peanut butter chips
Directions: 1. Preheat the oven to 350 degrees F.
2. Start by combining the butter, brown and white sugars in a large bowl using a hand/stand mixer or your own brute strength. Add the peanut butter, stir again. Add the egg, stir, vanilla stir.
3. Measure in the baking soda and flour and stir just until combined. Stir in the oats, m&ms, chocolate chips and peanut butter chips.
4. Scoop using a cookie scoop (measuring about 2 tablespoons) onto a cookie sheet lined with a Silpat mat or sprayed with cooking spray (just in case). Press down gently as they do not spread on their own.
Bake for 9-10 minutes but no longer. You want these to stay soft. Remove from the oven and let cool on the cookie sheet for 2-3 minutes then move to a cooling rack.

variations: We have omitted or added ingredients to use what we had on hand.. coconut, rice krispies, peanut butter chips, nuts and so on.. so feel free to play around with the recipes!

My favorite Snickerdoodle recipe.
1 cup butter 1 1/2 cups sugar 2 large eggs 2 3/4 cups flour 2 teaspoons cream of tartar 1 teaspoon baking soda 1/4 teaspoon salt 3 tablespoons sugar 3 teaspoons cinnamon Directions:
Preheat oven to 350°F. Cream butter and sugar until fluffy. Add eggs one at a time. Combine flour, cream of tartar, baking soda and salt in a separate bowl. Blend dry ingredients into butter mixture. Mix 3 tablespoons sugar, and 3 teaspoons cinnamon in a small bowl (if you like more cinnamon, half and half work well, too). Form 1 1/2" balls of dough, then gently roll into cinnamon/sugar mixture until completely coated. Place on parchment lined cookie sheet, and flatten each ball slightly with palm of your hand (6 cookies fit well on a standard "half-sheet" sized cookie sheet) Bake 15 minutes. Remove from oven, slide parchment from cookie sheet and allow cookies to set for a few minutes before transferring them to cooling rack. Yield 18 4" round cookies
These cookies should be round, flat, and chewy/soft. These are not cake-like snickerdoodles, they are not dry or crumbly, either. Everything a snickerdoodle should be, by my standards.
