This is a restaurant sized recipe so I recommend a half batch if you're cooking for under six people.
2 eggs 3 cups almond milk or whole milk (soy doesn't work so well) 2 TBSP Vanilla 1 tsp salt 1 cup sugar 4 cups flour 1 cup vegetable oil 2 TBSP baking powder
Blend eggs, milk, vanilla and sugar until frothy. This can be done with a whisk and some elbow grease or with a hand mixer.
In another bowl mix flour, salt and baking powder.
Pour mixture over dry ingredients and add oil beat until lumps are gone.
The batter should be thinner than regular pancake batter and thicker than crepe batter.
These make great "silver dollar" pancakes, and in general smaller cakes tend to do better with this batter since it's more delicate the pancakes tend to tear if they are larger.
recipe takes about 15 minutes to prepare 30 or so minutes to cook all the cakes, yields around 70 cakes depending on size.
